How to store and fully enjoy our products

The breads

Our breads keep for a long time at room temperature, but they can also be frozen. Most of our breads have a very moist crumb. This is why they stay fresh and soft for a long time.

Storing at room temperature

Here are a few tips on how to store your bread at room temperature:

  • Wrap your bread in a paper bag or a light cloth bag (organic cotton or linen).
  • Make sure it breathes! If it doesn't, it could quickly go mouldy.
  • Store in a cool, dry place away from light (in summer, put your bread in the fridge if your house isn't cool enough).
  • Cut your bread as you go along. This way, it won't dry out as quickly.

Under these conditions, large loaves will last 1 week! Once dry, put the slices in the toaster, frying pan or oven for a few minutes. They will regain all their softness.

Tip: to eat the bread as it was on the first day (or almost): Preheat your oven to 300°C (or maximum temperature). Place the lightly moistened bread in the oven for 10 to 15 minutes. Enjoy the bread warm and crusty. The bread should then keep for a few days at room temperature.

Freezer storage

All breads are easy to freeze. Here are a few tips to help you keep them in the best possible condition in your freezer:

  • Slice your bread. If the crumb is too sticky, wait 1 or 2 days before slicing.
  • Place a sheet of baking paper between each slice to prevent them sticking together
  • Wrap your bread in a paper and/or plastic bag to prevent frost forming.
  • Freeze your bread as quickly as possible!
  • Take slices as you go and leave them to defrost for a few hours at room temperature OR put them in the toaster, frying pan or oven for a few minutes...

Bread can be frozen for several months, but it will still lose some of its quality, so we recommend that you eat it within 2 months.

Pastries

Not all pastries keep in the same way. Some can be kept in the fridge, others cannot... Refer to the instructions on the page for each product. However, here are some general tips for each product category.

Dried biscuits & granola

Dried biscuits (speculoos) and granola can be kept for several months at room temperature. I prefer to keep them in closed containers (glass jars, metal tins, etc.) in a cool, dry place.

Soft biscuits & cakes

This category includes the following pastries: cocoa fondant, coconut rocher, snickers, bounty, carrot cake, madeleine, financier, cocoa caramel entremet... In short, all biscuits and cakes that are not dry.

Even though these pastries can be kept at room temperature, I strongly advise you to keep them in an airtight box in the fridge. This way, most will last at least 1 week without losing their softness.

This type of pastry also freezes well. But freeze quickly!

Waffles & brioche products

Brioche products include waffles, cinnamon rolls, cougnous, etc.

These products are best eaten the same day. They should normally be eaten straight from the oven/waffle maker or within a few hours.

Fortunately, there are a few tips for eating them after a few days.

I recommend wrapping the products in plastic film (or an environmentally-friendly alternative) so that they don't dry out, and storing them in the fridge.

To make them soft again, either :

  • a few seconds in the microwave
  • in the steam oven
  • about 10 minutes in an oven preheated to 160°C
  • a few seconds in a steam pan (using a daisy)
  • The toaster also works quite well, but tends to dry out the products a little more

This type of pastry also freezes well (unless it contains custard). But freeze quickly!

Fragile pastries

The most fragile pastries must be stored in the fridge and eaten within 3 or 4 days.

These include pastries containing cream (eclairs and filled choux pastries) and lemon meringue tarts.

This type of pastry often freezes well. But freeze quickly!

CAUTION: Custard-based products tend to be greasy after freezing. We therefore do not recommend freezing them.

Christmas logs

Our logs must be stored in the fridge. We guarantee their freshness for at least 7 days. You can also freeze them to keep them longer IF they have not been defrosted by us.

Serving suggestions: you can enjoy them cold, frozen or at room temperature for around 30 minutes.

Viennoiseries

Storage instructions: 4 to 5 days at room temperature OR in the fridge OR several weeks in the freezer.

Serving suggestions: our viennoiseries are best eaten the same day, but you can give them a second life by placing them in an oven preheated to 180°C for around 10 minutes (+5 minutes if frozen). Leave to cool slightly on a wire rack before eating.

Galette des Rois

Storage instructions: 2 days at room temperature / 4 to 5 days in the fridge / several weeks in the freezer.

Serving suggestions: the galette can be kept cold, at room temperature, or reheated for 10-15 minutes in an oven preheated to 180°C. The pastry should be crisp and the filling soft.
